Christmas Chaos: OG 1.088, FG 1.017, 35 IBU, 9-ish% ABV 14 lb Maris Otter 1 lb British Amber 8 oz Crystal 60L (TODO: maybe cut this out altogether) 4 oz Crystal 120L 7 oz chocolate (TOO MUCH: use 4 oz next time) 4 oz very dark crystal 1 lb light DME 1 lb wheat DME .5 oz EKG 5% 60 mins .5 oz Fuggles 4.2% 60 mins .5 oz EKG 5% 30 mins .5 oz Fuggles 4.2% 30 mins 15 mins: 1 split vanilla bean, 2 crushed nutmegs, 6" crushed cinnamon stick 1 tsp yeast nutrient 1 tsp irish moss 1.5 lb wildflower honey for 0 mins Wyeast 1728: Scottish Ale 2006-06-22 - 23 Starter ---------------------- - popped yeast at noon on Thursday, then made a smallish, weakish starter that night. - then made a stronger, slightly larger wort and added it on top of the first wort in the starter growler. This should make a HUGE amount of yeast. 2006-06-24 Brew --------------- - mash in 4.5 gals water at 170F, rest at 150F 30 mins - sparge with 6.25 gals 175F water, the frist gallon boiling - runoff, collect 8.25 gallons at 1.053 gravity (collect extra 2/3 gallon in another pot) - boil 90 mins, beginning hop additions after 30 mins of boil time It rained like crazy, so I'm not sure how that effected anything - stir in the honey just after turned off burner. I think this will work very nicely. - end up with OG 1.088 (maybe didn't need all that malt extract). - aerated very well after pitched the big-ass starter. 2006-07-09 Rack --------------- - SG 1.023 - tasted really nice, dominated by vanilla, a little nutmeg/cinnamon also present - still very sweet, hopefully will dry out a lot more (can probably be in secondary two or three more weeks. 2006-07-XX Rack again --------------- - broke hydrometer, so no idea what the gravity was - still vanilla heavy, with some sharpness from the honey. needs some time to settle out 2006-08-02 Keg -------------- - good tasting, and VERY boozy - will bottle soon, but not just yet 2006-09-21 Taste ---------------- - very yummy - very rich, with some sharpness from the honey - the vanilla was fairly evident - not as dark as I'd feared, but it's still pretty dark (probably should use just 2 or 3 oz chocolate)
